La Sponda, the hotel’s formal restaurant, has hundreds of candles lit every evening, with bougainvillaea climbing the walls, awarding it the prettiest restaurant. At night you can gaze out at the coloured houses scattered against the most beautiful sunsets that Positano always delivers, and over the water to the Siren Islands.

Belvedere Restaurant: Belmond Hotel Caruso, Ravello, Italy

Ravello hits up high on a limestone throne on Italy’s Amalfi Coast, from the terrace of the Belvedere restaurant the impossible blue sea of Tyrrhenian sits below. If you can visit at sunset for a cocktail, the music playing in the evening and the colours of the sky around the gothic arches of the hotel will make your eyes sparkle.
